What does "unlimited" actually mean?

Exactly that: on a subscription there's no monthly minute budget and no cap on how long a single session can run. Minutes are only counted while a session is actually running; preparing beforehand costs nothing.

The one condition is that it's for personal use, so we'll say precisely what that means rather than leave it vague: you can use it on up to 3 devices in any rolling 30-day window, and on one device at a time. A device frees its slot automatically 30 days after you last used it, and you can see exactly where you stand on your account page. That's the whole rule — there's nothing else hiding behind the word "unlimited".

Credits or subscription — which should I pick?

Credits if you're interviewing occasionally: you pay once, they never expire, and there's nothing to cancel. A subscription if you're deep in a job search — past roughly 1,100 minutes a month (around 25 interviews) it works out cheaper than buying credits, and you stop having to think about the meter at all.
